Baked Blueberry Feta Egg Slice
Ingredients
- 3 large eggs
- 2 tbsp (30 g) Greek yogurt
- 8–10 fresh blueberries
- 40 g feta cheese, crumbled

(Optional) pinch of salt or herbs
Method
- Separate the eggs.
Place yolks in one bowl and whites in another.
- Whip the egg whites until they form a firm foam.
- Combine the yolks with the yogurt and mix until smooth.
- Fold the whipped egg whites gently into the yolk mixture to keep it airy.

Prepare a baking tray lined with baking (oven-proof) paper.
- Place the blueberries evenly on the bottom of the tray.
- Pour the egg mixture on top — keep the depth under 3 cm for even cooking.
- Sprinkle the feta cheese over the surface.
- Bake at 180°C (350°F) for ~20 minutes
or until lightly golden and set in the centre.
- Cool slightly, slice, and serve.
