Baked Blueberry Feta Egg Slice

Ingredients

  • 3 large eggs
  • 2 tbsp (30 g) Greek yogurt
  • 8–10 fresh blueberries
  • 40 g feta cheese, crumbled
  • (Optional) pinch of salt or herbs

Method

  • Separate the eggs. Place yolks in one bowl and whites in another.
  • Whip the egg whites until they form a firm foam.
  • Combine the yolks with the yogurt and mix until smooth.
  • Fold the whipped egg whites gently into the yolk mixture to keep it airy.
  • Prepare a baking tray lined with baking (oven-proof) paper.
  • Place the blueberries evenly on the bottom of the tray.
  • Pour the egg mixture on top — keep the depth under 3 cm for even cooking.
  • Sprinkle the feta cheese over the surface.
  • Bake at 180°C (350°F) for ~20 minutes or until lightly golden and set in the centre.
  • Cool slightly, slice, and serve.
